Tasting Note: This Icewine from 2023 shows very good intensity and lots of layers leading into a generous amount of ripe fruit, aromatics of peach, mango, and orange peel. Flavours of apricot and citrus with hints of clove and a touch of spice make this a classic Niagara Peninsula Icewine.
Food Pairing:
Always delicious with the traditional crème brule or crème caramel; try tropical fruit compote, roasted peaches or pineapple with pannacotta; cheeses from fresh chevre to parmesan with a dribble of honey; brown butter lobster salad with baby arugula and hazelnuts; Vidal Onion soup with Niagara Gold cheese crouton (a spin-off of classical French Onion soup).
