Nose: Intense bouquet of dark chocolate, black plums, liquorice and black olive tapenade. Secondary notes of cedar oak spice, nutmeg, and vanilla bean. Faint wafts of boot polish and patent leather give complexity and interest to the olfactory experience.
Palate: Complex amalgam of sauvory and dark fruit notes fill the mouth, coupled with cedar-oak spice and slatey tannins. Fine acid line provides drive and freshness.
Food Pairing: Beef, lamb, BBQ, roasted pork, hearty stews, aged cheddar.
